My daughter Andrea asked me for this recipe, so I thought I would post it.
I use pecans, but any nuts work. This is just one of many versions of sugared or toffee nuts.
4 cups pecans, walnuts, cashews, etc.
2 tablespoons butter
1/2 cup brown sugar
2 tablespoons water
1 teaspoons vanilla, or any combination of spices, like cinnamon, etc.
Butter a glass baking dish. 9x13 or smaller. Preheat oven to 275. Measure out 4 cups pecans to be ready to add fast. In a pan, melt 2 tbls butter, 1/2 cup brown sugar, 2 tablespoons water. Heat on medium and Stir until Just bubbling and foamy. Careful not to burn. add 1 teaspoons vanilla or tsp cinnamon. Stir in quickly then add in the nuts. Stir until covered. Pour into baking dish. Bake for 10 minutes. Stir and bake 10 more . Let cool completely. Some may stick on the bottom, just scrape as much as possible it is yummy sugar you can use for toppings on toast, ice cream, etc.
